How I love summer squash! Here’s my recipe for soup. It’s so easy!
About 6 average sized squashes, sliced
One tablespoon olive oil or butter
One large onion, chopped
About a quart of chicken stock
One pint heavy cream
Salt and pepper to taste
Heat olive oil in skillet. Saute your chopped onion until it’s soft and translucent. Add sliced squash and cook until soft. Add chicken stock and cook until warm. Remove from heat and blend (with a stick blender or regular blender). Add salt and pepper and heavy cream. Serve warm or cold. It also freezes well for prepping ahead of time and serving later. Delicious!
